Serves 10 people

For the Citrus Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar

Ingredients for the Cocktail (produces 850ml, serving 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Put all the ingredients in a pan, bring to a light boil, agitating to dissolve. After that, turn off the stove allowing it to cool down entirely. Pour to a sterilised bottle, cap it keeping it chilled, it will last for around a month.

To make Batch Mix: Mix the specified spirits and syrup into a big jug, let it rest for an hour, then pass it through , ideally through muslin, to ensure it's completely strained.

To serve: Pour 85ml from the premix into your stirring glass filled with ice, gently stirring carefully for about 60 seconds until cold. Strain to a frosted cocktail glass or equivalent, decorate with the cranberries and finish using a brief mist with the mandarin essence over the top.
